Friends, family, fellow foodies - it is an absolute honor to share this recipe with you here. This particular recipe is near and dear to my heart... (and my stomach). I think it's also exceptionally appropriate that we relate this glorious green sauce back to the Heart Chakra, because - like LOVE - it makes everything better, and you are only going to want more! It's super fresh, flavorful, and crazy easy to make... It's chimichanga sauce. (Just kidding... but that's what my friends and I call it, so if you really want to confuse your dinner guests, let 'em know you're pairing the dish with the greatest chimichanga sauce they'll ever have.) What we're actually talking about today is AVOCADO CHIMICHURRI!
You seriously won't want to LEAF this one out.
You will need...
1 cup cilantro leaves (packed)
1 cup parsley leaves (packed)
1 Tbsp chopped garlic (I encourage an enthusiastic tablespoon... Because I LOVE garlic and always end up adding more)
1/2 tsp salt
1/2 tsp ground cumin
1/2 tsp red pepper flakes
1/4 red wine vinegar
1/2 cup olive oil
My favorite way to prepare this cool condiment is to pulse all the ingredients (besides the avocado) in a blender or food processor until it just becomes smooth. Cut the avocado into cubes and stir into your sauce afterwards. It will keep well refrigerated in an airtight container for a few days. Alternatively, if you prefer a more chunky chimichurri (or chimichunky sauce) then you can simply finely chop the herbs and garlic and stir together with the remaining ingredients rather than blend!
I am so serious when I say... this sauce is everything I AVO wanted and more! I typically serve it with meat, like a nice steak or pork, but it has also gone wonderfully on top of salmon and even eggs!
